It's me. I'm the idiot. Figured I'd share to remind folks since the days are getting shorter.

TL/DR: If you have Auto High Beams and want to toggle your brights on and off manually while driving slowly, turn the lighting knob below OFF of Auto. Gotta be smarter than the Jeep.

Was driving home late at night after finishing blind prep for this year's deer season. I was exhausted and the dip in temps had the deer trying to cross the road all over, so I was going slower than usual trying to keep an eye out for their game of frogger. Anytime I turned onto a gravel road and drove slowly, auto high beams would turn off. I could engage the brights manually by holding the lever in, but couldn't toggle on/off. Was really frustrating and I knew there was a way, but couldn't figure it out in the moment. Took me way too long to realize all I had to do was turn the dang knob off of Auto. I'm assuming Auto High Beams keeps them off under 35 mph or something like that to keep them off in town and in neighborhoods.

It's obvious in hindsight, as most things are. And yes, I know this is in the manual.

Have you tried pushing your bright/dim lever forward to turn off auto brights?

Ha, yes. Like 40 times. That's what was throwing me off. Even if Auto High Beams are turned off, you still can't toggle the high beams on if the knob is on Auto.

It would only let me toggle high beams after I turned Auto off on the knob.

Same here. My switch is in Auto 100% of the time, but I can still push-pull the lever to turn on or off the high beams.

The speeds are in the BCM in kilometers/hour - these are the defaults -
On is about 15 mpg, off is about 12 mph.

No, all you are doing is dimming them - if you want them on high and for some reason they aren't going there, you have to turn the headlight switch to ON and not AUTO.
Using the dimmer turns off auto high beam, but doesn't force high beam when going REALLY slow.

Here are the default speeds - this can be changed with JSCAN, etc.

2014 CBC Config I/O & Feat: Auto High Beam On Threshold- 25 km/h (15 mph)

No, again, you are manually turning off auto high beam and going to low. You can't manually move that lever and get to high beam - as soon as you do that you toggle auto high beam off or on.

The book is clear on this and there's a lot of discussion in another thread on enabling it on vehicles that didn't come with it.

On a road with no real traffic, I’ll just use my aux lights in that case. I have 4 cowl lights. One set is forward and the second set angled for ditch lights and they are better at seeing deer off to the side before they start frogger. If a cop happens to see me to do they usually understand. In Utah we used those and watch for that nice little eye reflection or them barreling down a hill.

Maybe I am an idiot too but: I thought that AUTO setting is to automatically turn on headlights when it gets dark enough? I thought you need to push the high beam lever forward to get high beam? Am I missing something?

Yes, you are missing something LOL. Something some vehicles have had for years. The ability to automatically dim the lights - go to "low beam" when traffic approaches, then back to high beam when the traffic/car, etc. passes.
It uses the same camera and equipment used by ACC (Adaptive Cruise Control) and forward collision avoidance. It's been around for years. New to the Gladiator since December 2019.

So, it's -
'Auto HIGH BEAM', not just 'automatic headlights'.

Auto is a setting on the light switch that turns the headlights on under low light conditions (uh, like night time)

Auto HIGH BEAM is the ability for a vehicle to have high beam headlights on, then dim them when traffic is detected.
