Can this be done? Assuming I permanently disable ESS will i be able to charge the in bed battery off of the alternator still? I want to power all my in bed accessories off the second battery and also integrate a solar charge controller.

You'll need an isolator like used on RVs and certain other dual-battery equipped vehicles.
That battery isn't connected directly in parallel to the main battery.

do you happen to have a wiring diagram or know how it’s wired in?

No need to mess with the ESS system or battery. Just add a Smart Isolator. https://smile.amazon.com/dp/B00LMGPHW2/ref=cm_sw_r_cp_apa_i_LwGoFb3SAP4HY
Warn has cable sets that work well. There is room behind the right rear wheel to attach a battery box to the frame.

Yes, at least one forum member did a GREAT write-up on how they installed the battery, isolator and so on to have a rear battery.
I figured I'd do a search to try to find that thread again when I decide I want a rear battery for running power in the rear, running a trailer mounted winch (on my car hauler) or other "accessories" back there.
