I can't speak authoritatively because obviously I didn't design it and it isn't my business, but without looking at the racks that they make for other vehicles, my guess is that it's a combination of stability and common parts with other racks for other makes and models. Something that follows the contour of the cab (nearly vertical) would certainly be less laterally stable, especially at those heights. I think it's a cool looking rack and to go more vertical, you'd probably need some triangulation, which would mess with the space you've got under the rack.
My only wonder is if they located the feet in areas where the plastic rail cap is well-supported. They seem pretty thorough with their design, so I'm guessing they did. When I prototyped our lo-rise rack and used feet on the rail cap like that, I saw deformation of the cap after about 1000mi in the sun.
