This could be anything that is collecting data from me.The problem is you are comparing your 'spy central data collector' phone, that you pay the data transfer cost for, to the Telematics data that Jeep collects and pays for. Yes, they have the ability to collect more in the future, but they aren't now. They pay AT&T for that monthly connection, and keep the data transfer small and simple. When they start adding body sensors and cameras, then you should be worried.

You can probably prove the tire pressure was ok before the blowout by plugging into the Jeep and pulling history manually. I would think anyway.Then drop the guardian service.
On the other hand - the tire pressure stuff could be handy if you have a blowout, there's an accident, and you can prove your tires were indeed properly inflated.

I get stuff that has an estimate of my mileage and it's always wrong because I don't drive the miles in a year the average owner does.
If you want to skip all of that stuff, yeah, a CJ5 would do nicely.
On the other hand, I know a real person who was in an accident where there were no witnesses - just himself and the other party who accused him of not stopping, and making an improper left turn. He was sued, ended up in court as the other party and his insurance were fighting for everything the guy had and owned.
GM came forward with information showing that he had stopped, his speed at the time, etc.
It only recorded the last xx seconds - so there was no trip history, but it was enough info to blow the other party away in court.
So I suggest that you tell your mules you have to meet in different locations to receive product and don't use the Jeep.
I always use my older cars to meet with my supplier and 'customers' and don't take a cell phone with me, cash only, meet in areas with no cameras.

funny note on tracking, I traded in my 22 for a 23 with all those discounts at the time. The dealer had a Rubicon that was having issues & the owner demanded a Gladiator ( this was after waiting on his to be fixed for 3 months. long story short they loaned him my old Glad. I kept getting low fuel indications from the jeep app & the person put 8K miles on it B 4 they could get it back, they even used my jeep app to locate it. evidently it stays in your name on the app until its sold. we tried to delete it multiple times.I'm guessing you haven't yet located the GPS Tracker your dealer installed under the dash.
