Doesn't the elock act as a limited slip when not engaged?

Yes, that is correct -- but is distinctly different from the past Torsen / worm-drive type diff options available in the past for rear axles (and seems to be available in some trims still for the rear I believe). The Mojave uses a locking rear and open front diff. Electronics aside, it is just open up front from a mechanical perspective.

*Edit: I had the mechanical limited slip on my Sport JL Wrangler and it was a nice upgrade over a plain open diff (no fully locking option on that Sport from the factory, of course). My LJ Rubicon had that along with the air locker. I'd have paid for that option if available. If memory serves correctly, the LJ Rubicon sticker stated "TORSEN" and they dropped that brand or mention of it after that. I am not clear if just another brand or they simply quit stating that. I'm a big TORSEN fan...

The new gen Ford Raptors use a TORSEN up front (no full locker from the factory). I'd be happy with that on a Mojave! Electronics have made a huge difference for many vehicles but I prefer mechanical advantage when I can get it...

I believe when the rear is not locked it is an open differential and traction control is achieved by selective brake application. It is either locked or open, not limited slip. The front is an open differential and the only traction control is selective brake application. I'd like to reference the source for this info to support what I stated but I don't remember where I read it.

In fact, the only selectable locker i can think that also runs as a limited slip is the Auburn Ected.

How does the rear locker work with a Selec-Trac equipped Mojave?

I know they're rare (shockingly) and the option isn't on the Jeep builder website anymore... wonder if they can still be ordered?

I ordered end of June and select trac wasn’t available then.

To the select trac question (ignoring selective braking), think of it as a clutch based limited slip between the front and rear axle when in 4wd auto via the transfer case (part-time is fully locked).

So in a low traction situation
4wd auto without the rear diff locked: 1 front wheel and 1 rear wheel driven with a variable ratio of power front:rear (biased towards the rear based off of other threads but I haven't verified myself)
4wd auto with the rear diff locked: 1 front wheel and 2 rear wheels driven with a variable ratio of power front:rear (biased towards the rear based off of other threads but I haven't verified myself)
