We got a new camper so I've been looking at brake controllers. REDARC has 3 variants, Liberty, Elite, and Trail.

Liberty is just a basic controller. Easy enough.

Elite and Trail both have a manual off road mode. I'm not really seeing any listed functional differences between the Elite and Trail. Only difference I see is the Trail comes with the Gladiator harness whereas the Elite you have to buy that separate.

But I'm more curious on this manual off road mode. Can someone enlighten me as to when/how/why this might be useful? Is having it worth the extra $100?

If you tow a trailer off pavement, the manual mode found in the Elite may be beneficial. Whether or not it's worth an extra $100 is your call. As you noted, the Trail variant is actually just the Elite that comes packaged with the vehicle-specific wiring adapter.

This video from Redarc explains the difference between the two modes and how/when the manual mode may come in handy:

FWIW, I went with their Liberty controller.
