Smoked a couple Tomahawks
Now we’re talkin! I’ve only done those once. So much fun. I grilled slow and low first with smoke, then seared on it hot after. Nerve racking at one point, but they were perfect. And SO BIG.

Thank you. It turned out great. I switched it up and brined it using the same brine my dad always used for smoking turkeys and rubbed it with mustard with Tony charachares to seal in the flavor. I hate mustard, but it burns off and seals in the moisture/flavor.

In the garage I have an old Sonos amp and some old Yamaha speakers. They still sound great when you crank it up.
I’m not a mustard person either, but it’s great for cooking.

The turkey wasn’t a fail, but was not my finest hour. I’ve done it before and it was perfect. But this time it looked done and the breast wasn’t when I cut into it. Since it was no longer trussed and off the spit, it spent a bit in the oven with a probe in the breast. So we ate the drip pan taters and carrots, which were amazing. The turkey will get eaten today, maybe in soup. Who cares. Just the four of us, so it’s not like I wrecked a big party.

I had to throw mine back in the oil for another 10 min. It happens. Probes for work right for deep frying. When I cook on the Weber, I cook low and slow and use temperature probes or I’d be lost.

I do sear 1st, then smoke to 125° internal, so I can control my final medium and medium rare

Can’t use a probe on the rotisserie though, so I used an ambient probe near it to keep the cooking even. But yep. It happens.

I haven’t tried that. With just regular thick ribeyes I just go in hot. I preheat that thing to about as hot as I can get it, which is around 600. Then I use a timer and to a 45 degree rotation mid side, to get more marks to seal in the juices. Same after flipping. Then a temp probe to around 145 for a good med rare. Cast iron grates help.

I just got some wireless Bluetooth probes for Christmas. I have not tried them yet. The company name is Typhur on Amazon. I wanted them for my rotisserie.

The cats ate well, just under 16 lbs turkey. Gave about half away to family next to me. Ate small bit rest in freezer.

Cats? Seeing the enclosure I was wondering if they are bobcats.

I definitely have some around. :giggle:

I'm planning on getting some chickens. I got sidelined mid summer and didn't get the hen house part built. Early today I was at Lowes and started to buy the plywood for it. I decided not to get it at that store, some of their younger employees were re-stacking plywood with forklift. 😳 😳 I got to see half a pallet of plywood busted up and seeing them "trying to push a stack in area" to short for what they had on the forklift. Glad it's not my regular Lowes store... hmmm I might be able to get some damaged at discount though in New Year. 🤔

If you have bobcats or mtn lions in your area I’d look into some heavy duty hardwire cloth or chain link for that enclosure. I’ve seen cats take the fender off a VW trying to get at a rabbit around here. Many I’ve seen will use tin roofing panels on the first 2-4’ to prevent that.

I've "over built" the coop with 1/4 hardware cloth sandwiched between 2x4s. Yeah, I kinda got carried away on building it. I actually don't normally have them to "close" all the loose dogs around. Bobcats, and other cats are seen/ recorded on security, door and game cameras around my area often along with black bears.

Lowe’s drives me crazy. Unless it’s a specific expensive item and they’re the only ones that have it. I avoid that store.
