Like others have said, gonna need more context to know if you're having issues or not.

But I'll chime in and say that I did a little over 800 miles round-trip this weekend, 90% of it with the cruise set at 75mph on the interstate. Stock Sport S with 3.73:1 gears and 245/75R17 tires. I got 22mpg going out with a headwind and 23.5mpg coming back with a tailwind. RPM's at 75mph were almost dead-on 2000 in 8th gear.

31.5" tires, so you'll be winding up just a small bit more than an Overland with 32.2, and your more narrow tires explain the slightly better mpg as well.
Any increase in tire width will see those numbers drop.

Yeah I’m seeing a couple threads I’m suspicious of that for, just created to generate site visits and interactions… there was another thread where someone was asking how to go off-roading and use their lockers and disco’s this weekend.

Not that there’s anything wrong with not knowing that stuff, but the vagueness and how wide open the questions are make me wonder.

You have to watch for "forum spammers" who make short, sometimes very vague posts, and some just to say "have fun" in response to someone taking a trip. They will sit back, make 4 or 5 posts that don't get much attention, establish a history in case anyone looks, hey, they've been here 3 months, then they post links, etc.
In fact one did just that, posting links to MOPAR parts pages that didn't really fit the conversation and were themselves vague.
Forum spammers used to come in, hit, and run to another forum. Now days they try to establish a brief history, 4 or 5 posts over a couple of months, harmless but "what the heck" types of posts.
The first thing I'd do if I was a mod was to check their IP address for location, or to see if it's on the lists of forum spammers out there.
The forum I admin actually will disallow IP addresses that appear on such lists and you can block countries.

2021 Gald Rubicon, 6500 miles, 35"tires, old owner put on CAI and after market exhaust.

MPH is 72-75 - my driving habits are granny style at the moment because I'm trying to see what max MPG I can get, currently I've boosted to 18.6, but this has been all backroads.

22 MPG's on 35's is a pipe dream. Has your Gladiator been speed corrected to account for the 35's over the stock 33's?

Also, how have you been calculating your actual MPG's? If not hand calculating and using just the "lie-o-meter" MPG display on the cluster, it can be dead on or 1-2 MPG's off at any given time.

Also, winter gas blend will give you a 1-2 MPG hit. Ran 35's on my 2020 Rubicon Gladiator and if I ran it like Grandpa on Sunday, I could get high 18's MPG but most times with a 70/30 HWY/CTY split of driving, I got maybe mid 16's to mid 17's most times.

In the midst of a cross-country drive at the moment with two passengers, luggage, and a 1750lb Uhaul trailer. I was averaging 14-15MPG (rubicon) through middle Minnesota but from there west to Wall SD, after encountering 40MPH quartering headwinds my mileage dropped to 11.5MPG. The speed limit is 80 but I am staying 65-70 due to the trailer.

At 70, on a relatively level road, the transmission will hold 7th and then drop to 6th on grades. I can feel the weight but the setup does not feel underpowered when I give it throttle. As needed it'll drop to 4th and pull up a hill. I'm interested to see how it goes on the Teton pass where speeds will be lower but the grades much steeper.

At 80* this afternoon oil temps varied between 200-220 with 227 at the peak. Coolant temps stayed around 200*, and the transmission was generally around 190 increasing briefly to 200 when accelerating onto the highway. I felt the cooling system did well and the brakes were quite powerful enough with a good feel.

Having made this same drive in other circumstances I've noticed the road surface has an effect. Smooth asphalt seems to be more efficient than grooved concrete.

I have not verified my 2022 yet, but every fill I did with the 2020 found the dash display was either right on, or a bit high or a bit low - and when taken over several tanks worth, it always came out well.
When I used the app to figure the long-term numbers, it lined up pretty close to the truck's numbers.

Been said many times - deviate from stock tires, mpg will go down. Increase the weight, width, aggressiveness of the tread (and that goes for the surface of the road, as well!), it goes down. Can't go any other way. It's pure logic, science and math. You can't pull more weight, or add more friction and get better mpg.
Just moving laterally from the stock Overland tires to A/T tires of the same diameter - lost mpg. The dealers said it would happen - I nodded and agreed and said "I know, I expect it".

We average 400 miles per 18 gallon tank in town. 500~ on the highway @70mph.

I think it’s Great!!! Our JKU hard rock 6mt, 5.13’s 37’s was a solid 9.5-10mpg @ city/highway approx 180/200mpt ??? the JT is boarder line an eco box!

So what's wrong with your JT?
My wife's 3.6 gets her 500 miles - about 26-27 mpg depending on the roads and speeds. Oh, that's in a Grand Cherokee - maybe that's the difference?
