If you go to General and then CarPlay on your phone, do you see the Jeep listed? It will probably say UConnect. I'd delete this if you have not tried already and delete the phone from vehicle memory. Re-pair the phone and see if you get a prompt to switch to CarPlay once plugged in. I have a 2024 so my screen is different but on the device manager screen do you have an icon for CarPlay next to your phone name?
I deleted I connect from the phone long ago. I do not get an option to switch to CarPlay when plugging it in.

I don't drive my Gladiator every day. I drove it Tuesday of this week and I can't even find the CarPlay app in my display. I stumbled across this thread and will look at it when I get home.

Have you tried to reboot the UConnect system? Put ignition in acc without engine running. Then hold both big buttons on each side of base of touch screen for at least till it goes black. Then release both buttons and put foot on the brake and start. Good luck! I had a similar issue with mine and pushed the UConnect Advisor button to reach tech support, they talked told me what to do.

I reset the system and CarPlay is back
He's already tried every system reset - fuses, buttons, disconnecting batteries and more.

2020 Overland, CarPlay just stopped working. Changed USB cable to Apple cable, nothing. Tried new cables in all 3 USB ports, still nothing. I pulled fuse 97, waited overnight, went thru multiple cycles, still nothing. Disconnected battery for a few hours, still nothing. Removed Uconnect from phone, still nothing. Phone charges, but does not start CarPlay when plugged in. Works fine in my wife’s Ford. Any ideas out there?
Solved! Apparently, something happened to my system, where the projection manager was turned off. I found it in the app section, turned it on, and CarPlay is back.

Where is the Projection Manager? Is that on the truck, or the phone? I searched my phone for it and didn't find it. My CarPlay stopped working today after unplugging for an errand for about 15 minutes.

My son's phone somehow took over control the other day while mine was providing Carplay. It froze up the uConnect and my Carplay would not work with any cable or any port through two car power cycles. When it finally worked, I had done the following

1. Updated my phone
2. Reseated fuse 11
3. Let the truck sit for 2 hours

Not sure what cured it

It's in the apps section on the head unit in the truck
I got in my truck and checked the settings you mentioned. Deleted a few "iphone" lines that were listed, and my phone just automatically connected like it was any other day of the week. Not sure what caused the hiccup earlier. Maybe it didn't approve of my podcast choice for the day!

Thanks for the info in this thread, I've got lots of options to review if it happens again.
