I did this until I ordered a Viofo A229Plus. Used my Hero 10 Black on the windshield behind the mirror, had to run a long usb-c cable to a battery in the glovebox and remove the internal battery while trying to get it to play nicely (they don't like to work without additional firmware upgrades and internal battery removed, but will when it wants). When it worked, it was good, but the hassle, and chance it wouldn't record or save the recording (they ALL overheat fast in 2k/4k modes within 15 minutes at most), I just didn't bother unless I needed a clip, and didn't expect it to work but was happy when it did.

Just save your money for the camera I mentioned, I'm waiting to order their waterproof rear camera so I can get a better view from the back (vs a view from the rear window, and needing the top on to use it). It also supports an in-cab camera, so that's front outside/inside/rear outside input support, 2k Sony sensors, HDR and/or 60FPS for a reasonable price. Been great with the hardwire kit for over a month so far.

I don't have pics of the GoPro setup or the current, but the Viofo is mounted behind the mirror (incognito) with enough ability to glance at the screen if needed and not needing to move the mirror. This position lets you see the hood edges and some side view in case of an accident, and also looks pretty good off-roading too, I DO have video of this but haven't uploaded it.

Better off looking at an actual dash cam vs trying to make a GoPro work as one, especially with the crazy amount of options today at cheap prices.

Personally I think the best option out there is the Wolfbox mirror, as it can record front and rear, and if you get the tripro you can use a third camera where ever you want. The only downside is the size of the mirror, takes some tweaking and tricks to get it to fit without interfering with the sun visors.

+1 GoPros overheat when in sun behind the windshield with no airflow. Not workable as a dashcam long term
GoPros overheat when running 2k or higher resolution in ANY environment OTHER than cold temps where the batteries provide 25 minutes of juice. At least my Hero 10 Black does (it's had every part warrantied multiple times to the point they won't honor their warranty anymore).

TBH, GoPro is an overhyped camera ecosystem. After you get your dashcam, if you ever are looking at action cameras for their intended uses, get the Insta360 One X3 (or newer) as they're the same cost (when not on sale) and provide all/more/better features than GoPro does.
