I've been looking at a number of electrical panel type doo-dads like this recently. I'm wanting to upgrade to either an LP4 or the RockShock lights (I already have a lot of money in BD stuff so might as well just save and keep it consistent I'm thinking) but they require a 3 or 4 position switch for a low, high, off and the amber backing light.. so the factory aux switches would already be maxed out with just on light almost, not to mention two of them are way too over powered.

I did it this way, just bent up a bracket and sprayed it black. Bent with a mallet and a wooden block, cost me maybe $15 I have a lot of wiring in the location op posted but that is a clean bracket.

Here it is all wired up with fuse. Ignore the black cable (should be red) as it’s what I had on hand.

I used a simple keyed battery cutoff switch. I fabbed the bracket from a piece of aluminum bar stock. It's attached with a pair of rivnuts using stainless steel hardware. I didn't like the look of bare aluminum, so I sprayed the bracket with some leftover crinkle finish gray spray paint. It works great and altogether, it was less than $50.

I have the bulldog version and it has a plate with it to install approximately there, and comes with a 2 gauge "pigtail to go to the + on the battery. There are no instructions. It appears that you run the winch positive cable and negative cable to the switch, and the pigtail to the + on the battery. What grounds the winch then? Run another cable to the negative on the battery?

Yes. I grounded it directly to the battery.

Plow and winch both ground to the IBS stud on the negative terminal.
The red cable goes to the winch solenoid under the plow fuse - and supplies power to both the winch and snow plow. Can't use them both together so one cable is fine for both.

Solenoid for winch and plow fuse both on the same piece of aluminum angle -
