The 2x4s are indeed easier to get in and out - a wider board has to be removed or inserted perfectly level.There is one advantage I can think of. If you cut a 2x8 correctly for a snug fit, it is a bit unruly to get in and out, especially if you have tonneau cover tracks in the way. The 2x4s are just easier and lighter to handle.
But yes, you can absolutely do a 2x8 and rip it.
Also - I've used just ONE when I have things I don't want to slide forward in the bed but may want longer things back there at the same time and don't want a full width board sticking up. The 2x4s give me more options, easier to store, etc. and you can sand and smooth and paint them to look as nice as metal.
