Update: I picked up my Jeep from the dealership yesterday. I was told by the service manager they didn't find anything physical wrong. All of the codes were communication based, so they disconnected, cleaned up, and reconnected a bunch of wires, fuses, etc. They cleared the codes, took it for a long test drive (50ish miles based on the miles I sent it to them with) and couldn't re-produce the issue. I have another 40-50 miles on it since then and haven't had anything wrong yet. I hope it really was that simple and I don't have this issue again.
Side note: Everything was covered under warranty. The dealership had no issues with the new tires/wheels I put on, and knew that I used J-scan to update wheel size. Never got any hassle at all from them, no complaints at all. Kunes Country Jeep in Elkhorn. They even had a bunch of new Gladiators on the lot if anybody is looking in the southern Wisconsin/northern Illinois area. Make sure to see my old Army Buddy Eddie the sales guy.
It'll be hard not to always be a bit skeptical from here on out, but I'll try and stay optimistic. Thanks for all the replies.

2021 Gladiator Sport S, 3.6 with auto transmission, 9700 miles. No mods other than new tires. Driving along on a cruise with my wife today when all of a sudden the screen starts going crazy! Luckily I was on back roads because I also lost steering control, it was shifting funny or not shifting at all, the wipers were going on their own, everything was nuts. Shut down it down and restarted it a few times, but it was still crazy. I tried manual shifting, still bonkers. All I could do was limp to a place I could safely park, I unhooked the battery and re-hooked it up to see if things would re-set. Unhooking the battery at least got it to drive normal but with a “Service Transmission” warning and check engine light. I'm so upset right now. I'm hoping my dealer can tow it in and find out what’s wrong. ?
