Yes, I see it's true the Sport S has the 1700 pound payload - I was hooked on the towing numbers, sorry............ but it's certainly not because you aren't going to be towing so you can figure to add 400 to the 1200 and go ahead and put 1600 pounds in it. Doesn't work that way.

They (sport) are light trucks, their curb weight will be lower, so they can handle the payload.
You said that the difference was that they figured you would not be towing so you could add the 400 pound tongue weight back in and haul more.
Not the case.
The automatic, the towing package, it adds weight to the truck. That reduces payload - among other things.
You are talking about the lightest, or one of the lightest JT versions, so of course there's a payload difference.
That sticker is king, the payload shown in this chart is for a base version, no options, nothing added. Start adding any options, that 1700 drops.
Even the bumper is different on a base sport.
And if you tow - if your tongue weight is 400 pounds, you now have 1300 pounds left for payload.
If you tow like me with 500 pound tongue weight, you are now down to 1200 pounds left for payload.

If you start at 1200 pounds payload, and tow with a tongue weight of 400, you now have 800 pounds for payload. If your tongue weight is 500 pounds, you are down to 700 for payload.

You don't add to that 1200 pound payload number because you aren't towing,
you do subtract from it when you are towing.

Why not go weigh your truck, and compare to your GVWR? That should be the definitive answer. You may just have some really heavy options. Question: do you have the dual top group? Another member thought they might be counting both tops in the curb weight, therefore reducing apparent payload.

Mine weighs 4,813 when full of fuel, no driver.
Here's the real bottom line, regardless of charts:
If your payload STICKER says you have 1200 pound payload rating and you tow and the tongue weight is 400 pounds, you subtract that 400 from 1200 and have 800 left for gear and family

If your payload sticker says you have 1200 pound payload rating and you don't tow, you have 1200 pounds for gear and family, you do not add 400 pounds because you aren't towing.

The sticker is the sticker for your truck, the one you bought, it doesn't matter what charts say.

I don't know why people are hooked on trying to reverse engineer that sticker number and claim different numbers.
A person should know what they are buying or have bought, and if unsure, ask.
Charts and web sites are for bare-bones trucks, zero options.
These things are all done automatically - no one at the factory weighs that truck. They have everything plugged in with every possible combination and the decal is printed and applied. To do otherwise would be costly and problematic at best.

His is manual. Maybe just some heavy options. They add up quick. I don't have many options, (though I do have the towing package) so my payload is higher. Even though on paper, a Rubicon is heaviest, in reality, my basic Rubicon is lighter than a lot of other trims loaded up. The chart, like you mentioned, is only a starting point, base models. The closer you are to base, the closer you'll be to the chart.

Most likely.
The chart is the MAX, only standard equipment. It's not what anyone should expect to see in their own truck. It's if you order the base of that level of Gladiator. You'd have to order with no options at all to get those big numbers, or at least a combination of options that didn't subtract much.

Bed cover, spray-in bed liner, trail rails, leather vs. cloth?, heck, maybe even splash mats. 8.4 vs the 7" system, any number of things could impact it..
People seem so very surprised and almost angry when their sticker doesn't match the charts.
(and then we go ahead and add other heavy stuff after we get it LOL)

Tile? I don't envy you that job when you got it home............ assuming it was for home. Doesn't take many boxes to add up to that weight, either.
