What we're looking at is a Jeep Wrangler JLe that's been converted into a two-door Gladiator.
So really if you want to convert to 2 doors, you want to buy a Wrangler, not a Gladiator.

I feel like this has been a thing for quite a while now.

3 Wheel base options to fit intended use cases!

Something like report number 3?

The problem is - 2 door pickups just don't sell well these days. Look around. They are pretty much dead. People want cabin space.
If you want a shorter Jeep, buy a Wrangler, use the back to haul stuff.
And with the full floating axles on the newer Wrangler (Rubicon?) its tow rating isn't bad for a short wheelbase vehicle. The shorter they are, the harder they ride and the less that can safely pull. So what's the point of a 2 door Gladiator over a JL?

Another piece to help Quadratech sell stuff.

I love my 2 Dr JK and think a 2 Dr Gladiator would look sharp however, I would not have bought one. My Gladiator is the family DD, my JK is my play toy.

I need the back seat area for grand kids, dog, etc.

It looks kewl, I’m sure they put a ton of work into it, and I really like the build … but quadratec calling it a gladiator is kind of misleading. It’s not a gladiator, and never really was. The only part(s) that were from a gladiator was the truck bed, correct? With that in mind, is there a company out there that does conversions from 4dr wranglers to make them have an open truck bed?

correction: the very back part of the cab also came from a gladiator

Couldn't say it any better. That's why we still have choices in Jeeps. People who want a two-door JT should build one. If you want the best crawler, get a JL. If you want a good all-around vehicle for off road and overlanding, get a JT. There is no perfect Jeep.

Or could be they just aren't on the lots, if you want a two door you have to go through the pain of factory ordering one IF they even offer it. EPA fuel requirements push bigger vehicles since the larger the vehicle, the less mpgs it has to meet. A 2 door JT would sell most likely better than a 2 door JL.

Strongly doubt it.
Think back to when 2 door trucks sold alongside 4 doors or extended cabs. The 2 door trucks sat. There's a reason they aren't made - market research and the fact that in the 1990s they were dying off. That's when I noted the trend toward larger cabs.
That's also not how CAFE works - it's fleet numbers, not larger vehicles get a break. They don't target specific vehicle sizes.
