The RAM mount systems work pretty well. I use one off the A pillar lower handle, but that violates two of the requirements you have.

I have the magnet and it is awesome. This is on the second phone case. Holds very well even when gong thru the corn fields

I have the Vector full width bar with 67 Designs bar clamps, arms, and device mounts for several items.
The only thing in line of sight through the windshield is my radar detector because it has to be. My Garmin GPS and phone are both below dash level.

I don't concern myself with "encroaching on passenger area" it's my truck after all.

CMM grab bar mount with Ram ball. Use a Ram arm and attach that to Quadlock mount with quadlock phone case. Expensive setup but it’s absolutely the best. It doesn’t block any view at all as it sits in front of the A pillar. Very secure, won’t fall with doors off.

The best thing about the course motorsports mounts are when they aren't being used there isn't a huge gawdy bracket hanging down blocking everything.

Is that mount screwed directly into the plastic cover?

Yeah. Screws and nuts through just the cap. Plus a smaller screw to lock the locking tab in place
