Is there a way to change from the capped fuel tank to capless like the old Stant part?

Does that statement sum it all up ??
I think so. I get it if you decided to get a Jeep and didn't really want one because maybe it was your best option or it was an option that you chose.
If you go into it wanting a Jeep you're willing to take what a jeep has to offer to get the Jeep experience.
A lot of people maybe don't understand how jeeps are so upgradable and how that is almost the best part of owning a jeep that needs to be upgraded or can be modified to your own personal machine.
I know there's some jeep heads on here that have been around a while and rock crawl or into extreme terrain and really like to build their own Jeeps by hand and can, but then there's other guys who just want a Jeep and to make it their own the way they want it to do whatever the hell they want to and don't care what the Jeep heads think. It's a community of people that just like Jeeps no matter how dumb or smart they are or think they are.
If this ain't you I feel for you. Don't go away mad, but maybe just go away

I’ve never had an issue in the past 5 years I’ve had one on the vehicles I’ve had. Now I have to worry about that cap on the gladiator not hooking up and the door and hitting the side of the bed.
5 pages, didn't read, but if noone else mentioned it you can remove the plastic strap that holds the cap so that it's just a loose cap, then you can sit it on the bedside.

How much did the fox 2.0 run? Does it stabilize the rear end some so slight bumps aren’t so jarring or have such a hefty rebound?
Rebound will be less with some weight in it.
Ironically, this idea nauseates me. I use my truck like a truck, and it's full of junk to go about day to day life, and having to clean all of that out to go for an open air drive in Louisiana sounds like hell.
Look into a Decked drawer system. It adds some weight, is a awesome product and stores your stuff while cutting down on the rear stiffness.

But this puts you into what makes jeeps so great. Adaptability. Doesn't matter what it is, there's a product to make it better and more fun. If you're the type that doesn't want to play with and modify your stuff, jeep isn't for you. You want fast? Make it fast, change gears, add a charger and you're ripping 0-60 in under 4. For me, buying a fast car off the lot will be fun for a few weeks but then I'm bored with it because I can't do anything to it.

Try adding some cheap easy to do mods and I think you'll find you'll see things differently. For comfort start with the Seat Jackers. low cost, easy install and vast improvement to the seat angle.

The mission adaptability is one of the things that had me come back for another Jeep.

A lot of things I hate about them, but man if it's not like having a good multi tool in your pocket.

I looked into Decked systems, and I eyeball them every time I see one on marketplace. If I had a bed cap, I'd probably try one out, but with no bed cap - I really need my bed depth more. But decked would be great for all my tools. I'm practically loaded out like a mobile mechanic for the most part.

I was the same way. Couldn't give up the bed depth. I ended up stumbling on a dirt cheap 5x8 trailer and that solved the bed thing. It's way easier loading stuff with that ramp lol. That and a sheet of plywood fits on the trailer!

A full size 4wd pickup is great until you need to drive or park in the city or park in (or enter or navigate) a parking garage. Length, width, height, and poor turning radius make full size trucks less than ideal in these and other situations (and on trails, too, but that doesn't seem to be the issue here). If it is to be a person's daily driver, this should be a consideration. It would bite to take a loss on trading in a brand new Gladiator for a full size pickup only to find a full size pickup doesn't fit the bill either.

I believe the OP had a Ram before that he really liked.

I think the Gladiator is wonderful for in city parking, but I don't do that a ton. Usually just typical parking lots. I think the tell for me personally will be when I start commuting 75 miles a day this year, and whether or not the Gladiator is comfy day in and day out for it. Just throwing that in there as going back to fullsizes is a possibility for me at some point.

I had a Z71 Silverado that I loved driving and it was a good truck, but I hated parking it in tight city spots and parking garages and it was basically useless offroad for me because it was just too big for most trails.

Had to move my buddies '17 Sierra 2500HD around in the yard one time.

Felt like I was driving a Carnival Cruise ship.

Almost requested spotters and a radio.
