I called today about 4 since I hadn't heard. Sales manager said he couldn't get the higher ups together today. I will know what options (if any) I will have by Monday around 2.

I did ask what the odds were of undoing the deal and he said he couldn't answer that.
These scummy dealers must hate internet forums giving buyers an avenue for due diligence. Good on you for coming here and gathering information, even if it is after the fact and you’ve already made the purchase.

That Rubicon listing, with a gas engine, automatic transmission, and factory Tow Package, will get you the highest Tow Rating possible without going to a Max Tow model.
Per the list posted, it looks like 7,000 pounds? If so, that would work if they make me choose from their lot...right? The dealer is having a sale right now and that Rubicon is just $2K more than the used Sport S with max tow I was going to look at.

Trailer is 3200 pounds (looked again, it's not 3400), horse 1100 pounds.

I talked to someone else with a gladiator and he said "whatever they say you can tow - half that" - is that a fair statement or going overboard?

The dealer with the used Sport S said the current dealer needs to make this right, so we shall see.

Yes, that would get you the 7000 pound tow rating compared to 7650 for the Max Tow. That should be good for what you need. Many suggest not to exceed 80% of the listed tow rating, but trailer type and driver experience have a big effect there.

I would be extremely suspicious of any dealer telling you they will install a
"Max Tow" package.
Print this out and go talk to them to see what exactly are they installing.
A class IV hitch does not make a Max Tow package.
Go to Jeep's website and see for yourself.

I would undo the deal and get the diesel powered max tow or rubicon. They have to power / suspension you will need to tow a horse trailer. I prefer the Rubicon with the 3.73 gears.
No such thing as a diesel max tow. Not possible.

Rubicon gasser doesn't have 3.73 gearing - only the diesel has the 3.73 gearing and that's less tow capacity.
The diesel Rubicon is LOWER towing than the gas Rubicon.
Diesel is limited to 6,000 pounds while the 3.6 Rubicon has a 7,000 pound tow rating.
For her use, a Rubicon would work quite well - with the gas engine.
I'd bet she's not stupid on the road, especially with a horse in tow.

If they give you the option and the price difference between your Sport and the Rubicon is something you can make work, that would be a great option. Having towed several different trailers with my Rubicon, I am extremely happy with its ability.

They need to reverse the deal - because even if they are willing to add on some of the cooling for the engine, it still won't tow 7000 pounds.

If they agree to reverse, but say I need to buy from their lot - the Rubicon if it's still on sale.

If I can get away from that dealership, I will go for the used Sport S with Max Tow.

Anything else they say I'm going to tell them I have a lot of big brothers who are going to call them and tell them why they are wrong :LOL: kidding! I don't know what I will do if reversing the deal isn't an option.
