Got my update several weeks ago. As noted the gear you're in now shows up on the display. Zero issues, get a grip on yourself.

If you're not trying to be difficult...

What are you hoping will come of your meeting? The manufacturer absolutely cannot undo a required recall service, nor sell you another truck that doesn't have it done; you (or they) can only hope for another subsequent TSB or recall to supercede the current one.

I had the recall done on my manual 21 Sport S a couple months ago. Have been off-roading in the Vegas summer heat and it's running fine, haven't noticed anything different except for the gear display on the dash.

I'm not sure why you'd be against this recall, but my truck already had the recall done at delivery time (February Build). I can't speak of a pre-recall JT, but there are 0 issues post recall. The only time you'd notice it would be if you're smoking the clutch. At that point, it'd save you from burning it up. It doesn't interfere with driving at all. I think you'd have to be riding the clutch at engagement point to have it do anything, and then from what I saw on another thread, there'd be a message on the dash telling you to ease up on the clutch, so you'll know. There's no downside, on or off the road.

There is nothing you can do. If it is in the System as a Recall, they are required to apply it to the vehicle before releasing it, even if the Service Manager said they would not do it.

Check the air pressure in the tires. Many Dealers over-inflate them, and that will cause it to wander.
I had the same wandering behavior in the solution was just that..

OP, I'll be a bit more on your side here.

Everyone else is almost certainly right that your actual original opinion, that the recall causes any real substantial harm to your Jeep, is erroneous. But you get to think what you think and value what you value. The market tells us people like white/silver/gray/black Jeeps the most, but that doesn't mean I'd be cool with them repainting my Gecko to a 'better' color.

Ultimately you're upset because the service manager breached a contract with you, about something you care passionately about (even if no one else does). So contract claim...you need offer, acceptance, consideration, breach, and damages. The dealership doesn't contest you offered to leave the Jeep for service specifically excluding the recall or that the recall was performed and so breached any agreement to not do it which may have been made. Consideration is weird because it was sort of prepaid, but I think using a voucher in lieu of cash will still satisfy the rule. Acceptance is going to be hard - you're either going to face the sales manager not legally accepting, because he did it verbally and they'll say if pushed you misunderstood or he didn't directly promise, etc., or they'll escape on a mistake rule when his, hypothetically, written agreement is contradicted by some contract boilerplate elsewhere in the document you signed saying they can do recalls/safety stuff/etc. You'd really need something like a written promise to not do the recall with accompanying text that said promise supersedes and prevails over any other language in the doc, and it's vanishingly unlikely you have that.

In any case, the damages standard will crush you. Because as far as the market is concerned, they made your Jeep BETTER. Your damages amount to "I have a weird personal preference which relates to quantitative claims (not something amorphous like aesthetics) which is not supported by any evidence and in fact runs contrary to official government authorities in this area." Your only actual recourse is for them to buy your Gladiator back and provide enough cash for you to find an functionally identical used model which hasn't had the recall. There's...0 chance...anyone finds that reasonable in light of the perceived damages here. From an outside perspective this is akin to seeking damages of thousands of dollars because someone stepped on your lawn because, to you, blade of grass X was just incomprehensively valuable and is now ruined. To you in that scenario you're not trying to be difficult, but to the outside world the behavior looks sort of crazy if not outright extortive.

In terms of what you can realistically ask for: 1) an apology; 2) some vague commitment from them to be more careful in the future with what they promise customers; 3) them looking over your Jeep to make sure nothing is amiss re: the steering like tire pressure; 4) maybe some sort of coupon, though I'd feel super gauche asking for one if not offered directly.

A much better option, paternalistically, is for you to change your mind re: the recall harm and move on with your time and just enjoy your cool truck :)
