I do like having a record of what I have done to vehicles. It makes it easier to source parts in the future if/when things wear out too.Some people make lists, some don't. Different methods for different folk. They definitely have a place, also if you go to sell privately, Blamo! Its all there!
Going down to studs, service upgrade, or just a panel swap? Or we talking sub panel?
The house thing, oh it's a total rebuild. down to the studs. Bought my first house little over a year ago. Built in 1938 - just finished removing the last of the knob and tube electrical. It's a cute little place but needs to be all redone. Already did the roof, plumbing, sewer to the main, and working on wires. Rest of it is just remodeling - so the structure is fine. But, doing spreadsheets like that are helpful with this too. Well..for me anyway.
