There's several threads on this - including a copy of the bulletin from 2021 talking about this change and telling dealers it's not a mistake and do not install one.
I know of at least 2 threads on this.

The change was late 2021 model year so late 21s and then 2022 won't have the cover.

Ford knows how to make a good looking engine with no cover. :)

Can they make one that doesn't drop valves? (Looking at you, Bronco.)

My 2021 3.6 max tow came with one, if the reason for elimination was due to overheating, should I remove mine?

The overheating sounds like BS to me. The 3.6L has had an engine cover since it's introduction 10-12 years ago. If overheating was an issue, it would have been eliminated years ago. If they said cost saving measure, I would believe that.

Yea. They started leaving them off. They're pretty useless anyway. I took mine off about three years ago and never put it back on. I started using it as a holder for nuts and bolts. I don't know where it is now.

Yeah there's no way. It's 100% cost savings. They calculate savings by fractions of a cent, so it's surprising it took this long for them to eliminate the cover. It offers a tiny fraction of extra protection, and slight sound deadening, if even that.

This is a pretty common thing, Nissan did it with the Frontier and Xterra too. The early model years had a nice looking cover over the engine so it was appealing in press photos; after about 4 years, that cover and the brackets were removed from production. The 2005 models also had a real temp sensor, but sometime in 2006 they switched to a simple "Too cold, okay, too hot" sensor. There's still a dial on the dash, but it only has three positions after 2006 because the sensors were cheaper and they could simplify the wiring loom by one wire.

People Work?
My best guess is they ran out of them due to the scamdemic and decided they weren't' important enough to hold up production.
I do not have a PDF on that.
