On my GM cars, I could check if the doors are locked by pulling on the door handle, even if I have the fob with me. To unlock the door with the fob on me, I had to depress the little button on the handle.

With the Gladiator, however, I just have to pull on the handle (with the fob on me) to unlock and open the door. So I can't check if I locked the door by pulling on the handle. I'm left with hitting the lock button on the fob, which causes the horn to beep, or opening the door and locking (again, possibly).

Is there a quiet way to check if I've locked the vehicle?

In your settings you should have an option to turn off the honk when hitting lock. I have the 8 inch screen so I'm not sure how different it is for others.

Settings > Doors & Locks > Sound Horn With Lock and form there you should have 3 options:
-Off
-1st press
-2nd press

Edit: Looks like there is a way to do it with just the Fob only as well. Not sure if this works on all Jeeps.

Disable Horn on Lock
  • 1) Press the LOCK button for 4 to 10 seconds
  • 2) While the LOCK button is pressed (after 4 seconds), press the PANIC button. Release both buttons.

Press the lock button at least 26 times.

Pull the handle of the rear door instead.

I had to learn this when I got my first Gladiator five years ago. I was used to locking the doors and grabbing the handle to check. I tried when I got home, and the door kept unlocking.

I grab the passenger handle to unlock all the doors and the tailgate, the driver handle for just the driver door. I use just the tip of my finger to lock it, and listen for the locks to engage. I then satisfy my OCD by checking the rear door handle.

What’s work?
My wife’s Highlander does that on any door. Drives me crazy! I just have to content the Toyota beep thing has locked it.

I just look inside at the door locks. I see the door lock symble, and the alarm flashing red, I'm locked. I do check the tail gate sometimes also.

I just hit the lock button on the handle and don’t worry about it. If someone wants something so bad a silly door lock isn’t gonna stop them.

Is there a way to have doors lock automatically when walking away with fob?

No

As for the OP's question, there is actually a built in "delay" of sorts such that if you hit the button on the handle and lock the truck the sensor in the handle is disabled for like, 3 seconds or something because the thought is you might have your hand in the handle while you're pushing the button and this allows for you not to automatically unlock it again.
